"Pici al Ragu' Toscano"
INGREDIENTS : • 2 CELERY STALKS • 2 CARROTS • PARSLEY • 1 GARLIC CLOVE • 1 ONION • 1 KG OF GROUNDED MEAT • HALF TUBE OF TOMATO PASTE • 500 GR TOMATO SAUCE • A GLASS OF RED WINE Fry all the chopped herbs with the olive oil. When browned add the meat and brown it well, then add the wine and let it evaporate. When the wine will be evaporated, add the tomato paste and let it cook for 5 minutes. Add the tomatoes, salt and cook for 2 hours on very low heat. Season Pici Pasta and serve hot with a sprinkling of pecorino cheese.
