"Crostini Toscani"

 INGREDIENTS:

500 GR. BREAD FOR CROSTINI ,
250 GR. LIVER AND CHICKEN HEARTS,
200 GR GROUND BEEF,
SALT AND PEPPER,
½ CUP OF BEEF BROTH, 
½ CUP OF WHITE WINE,
30 GR OF CAPERS,
1 ONIOIN,
4 ANCHOVIES,
5 LEAVES OF SAGE,
5 TBSP EXTRA VIRGIN OLIVE OIL.
Finely chop the onion and cook with extra virgin olive oil. When the onion will be gold color add the liver, the ground beef and sage.  Cook slowly  and when the meet will have be well colored add very little salt and the  white wine, cook until the wine will be evaporate.  Add the chopped capers,  the anchovies and the broth. Let it cook for 20  minutes than with the  kitchen aid mixer make a sauce. Spread the sauce on  slice of warm  toasted bread. Serve warm.
